
This is one of those recipes I turn to on weeks when there simply isn’t time to think about what to cook. I like keeping the courgette and carrot in small, even pieces so everything cooks at the same pace and each spoonful gets a good mix of textures. A generous sprinkle of oregano at the end ties it all together without masking the freshness of the vegetables. It’s proof that eating well doesn’t have to take long.
